Sharing Meals and Fellowship in the Lord
Dear Sisters and Brothers in Christ,
When I visit friends, or when friends visit me, one of the things that we like to do is prepare a meal together and then share that meal. Friendships are deepened and loneliness is banished when we share our faith, conversation, and some good food. As the Lord sustains us with the spiritual food par excellence in the Holy Eucharist, he gives us one another to encourage and support each other. Sharing a meal is an opportune moment for us to deepen our bonds with each other. Make the family meal an important part of family life. Gather friends around the table. Put aside phones and other devices and just be together.
It seems fitting in this context to share another recipe with you. I developed the following pork roast recipe with a bit of experimentation. Whether you prepare this or something else, take the time to be together with friends and family over a meal.
Braised Pork Roast
Ingredients:
- Pork loin roast
- 1 to 1½ cups dry white wine
- Olive oil
- Salt
- Pepper
- Italian seasoning
- Butter
Directions:
- Preheat oven to 300° F
- Rub salt and lots of pepper into the meat.
- Sear the meat in a frying pan.
- Remove the meat from the frying pan and place it in a baking pan into which some olive oil has been poured.
- Coat the meat with the olive oil, and rub it with a generous amount of Italian seasoning.
- Deglaze the frying pan with white wine and then pour it into the baking pan with the rest of the wine.
- Cover the baking pan with aluminum foil (or a cover if your pan has a cover) and bake at 300° F until the interior temperature reaches 170° F.
- Remove the meat from the pan and place it on a platter. Let the meat sit for about 15 minutes before slicing.
- Reduce the pan drippings to make a reduction sauce, swirl in some butter, and pour it over the meat.
